sometimes one just doesn’t know what to say and sometimes one just doesn’t know how to behave. it can happen, even to the best of us. it’s a time for keeping silence, i suppose.
hiking in the pacific northwest seems to be nearly obligatory. it’s just too good to pass up. we went on a grunting good time hike today. the views were quite amazing and the weather delightfully mild. couldn’t have been better! stats: 11.9 miles, 3,810 ft. total climbing, 6 hours.

been meaning to try out this recipe for a long while. finally got a chance to try it out and was pleasantly surprised by the results – a graceful rose of a dessert! here’s the recipe:
1 cup ground almonds
3/4 cup water
1/4 cup maple syrup
5 teaspoons rose water
20 pitted dates, chopped
5 large sweet apples
In a food processer, mix the water, syrup, rose water and dates. Blend until nearly smooth.
Wash, peel and core apples. Grate.
Gently mix liquid mixture with apples and almonds.
Serve chilled with raspberries and vanilla whipped cream. Also goes well with raspberry scones or almond biscotti.

i can’t help but feel as though i’ve been wound up lately. the tide is slowly turning and the rain is giving me a welcome washing. there will be more frequent postings in the future. and a slow unwinding…
